Chaos Morning Pancakes
One bowl, super fluffy pancakes. Perfect for those "I want a real breakfact mornings" when you're short on time.

In all honesty these arose due to me needing to use up a 10KG bag of flour and my nine year old's love for pancakes. But I also don't want to be in the kitchen forever in the morning make things. These one bowl wonders, are quick and turn out super fluffy.
Everything goes in one bowl
Most pancake recipes want you to whisk the dry ingredients in one bowl, beat the wet ingredients in another, then combine them gently.
For this one we dump it all in together. Flour, baking powder, sugar, salt, milk, egg, melted butter, vanilla. Whisk until it comes together (no whisk use a fork, it gets the job done) and stop there. Don't worry if there's any tiny lumps.
If you have an ice cream scoop grab it
I use an ice cream scoop for so many baked goods. Muffins, cupcakes and these pancakes. But if you don't have one, it's fine. Just use a ladle or a spooy or even a measuring cup. It'll be fine.
One scoop per pancake. They all come out the same size and they all cook in the same amount of time...usually.

Wait for the bubbles on top to stay open before you flip. That is the only timing cue you need.
Chocolate chips, and everything after
I throw chocolate chips straight into the batter. If I forget I just put them on after before serving.
Feel free to toss-in or toss-on after cooking whatever toppings or add-ins you'd like for yours.
I butter them and then drown them in syrup when they're done.
Make more than you need
If you make more now, you have to make less later. You can put them in an airtight container for the week for future breakfasts or freeze them.
Let the extras cool all the way down before they go anywhere. Warm pancakes in a sealed container make steam, and steam makes them soggy. Once they are cool, an airtight container keeps them in the fridge for a few days, or they freeze well and toast straight from frozen.

Ingredients
- 1 1/2 cups (190 g) all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 cups (475 ml) milk
- 1 egg
- 3 tablespoons melted butter, or vegetable oil
- 1 teaspoon vanilla extract, optional
- Chocolate chips, technically optional
- Butter for the pan
Method
- Put everything except the chocolate chips into one bowl.
- Whisk until it comes together. It's ok if there's lumps.
- Stir in the chocolate chips if you are using them.
- Heat a pan over medium and butter it.
- Portion the batter onto the pan with an ice cream scoop. One scoop, one pancake, all the same size.
- Wait until the bubbles on top stay open, then flip and give it about another minute.
- Let any extras cool completely before they go into an airtight container or the freezer.
