Emergency I Need to use the Last 3 Bananas Bread
Without fail, every week there's always 3 bananas that nobody wants to eat from the bunch. How do we fix that? With this! Still counts as a fruit serving right?

I don't know about your household but every week there's always a few bananas they never get eaten. I don't know what it is about those last bananas?

A few tips
If the top starts browning too quickly after about 40 minutes, loosely cover it with foil.
It's even better the next day once the flavors have settled.
It freezes beautifully. Slice it first so you can thaw individual pieces whenever you want.

Ingredients
- 3 ripe bananas, mashed
- ⅓ cup melted butter (or neutral oil)
- ¾ cup sugar (you can reduce to ½ cup if your bananas are very sweet)
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups all-purpose flour
- ¾ to 1 cup milk chocolate chips
- Optional (but delicious)
- 1 tsp cinnamon
- ¼ tsp nutmeg
Method
- Preheat your oven to 350°F (175°C).
- Grease or line a 9×5-inch loaf pan.
- Mash the bananas in a large bowl.
- Stir in the melted butter.
- Mix in the sugar, egg, and vanilla until combined.
- Add the baking soda, salt, and optional cinnamon/nutmeg.
- Fold in the flour just until you don't see any dry streaks. Don't overmix.
- Fold in about ¾ cup of the chocolate chips, saving a handful for the top.
- Pour into the loaf pan and sprinkle the remaining chocolate chips over the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out mostly clean (a little melted chocolate is fine).
- Let it cool in the pan for about 10–15 minutes, then transfer it to a wire rack.
